Yesterday I decided I wanted to bake some bread. I’ve said it before, but it bears repeating…I LOVE baking bread. So I settled on the Pesto Bread from Bernard Clayton’s New Complete Book of Breads. Of the more than 1,000 recipes I’ve tried about 6. This is one of our favorites.
I prefer to knead by hand. There is something intensely satisfying in it for me. Push. Turn. Fold. Push. Turn. Fold.
First rising. 40 minutes.
After first rise divide the dough in half. Roll or flatten into a rectangle. Spread on pesto. Then roll it up like a jelly roll.
Place into greased bread pans. Seam side down. Cover and let rise another 40 minutes.
Ahhhhh. Fresh from the oven. 🙂
It is a very soft, tasty bread.
